The Enemy of Dry Fruits: Moisture & Heat
Premium dry fruits are rich in natural, healthy oils. However, when exposed to heat, humidity, and direct sunlight, these oils can oxidize, making your expensive nuts taste bitter or rancid. Proper storage is essential to protect your investment.
Step 1: Choose the Right Container
Never leave nuts in their original plastic packaging once opened. Transfer them immediately to an airtight glass jar. Glass prevents moisture from entering and doesn't leach chemicals into the food, preserving the authentic taste.
Step 2: The Refrigerator Rule
If you live in a hot or humid Indian climate and buy dry fruits in bulk, the pantry is not enough. Place your airtight jars directly into the refrigerator. Cold temperatures halt the oxidation process, keeping your cashews and almonds crunchy for up to a year.
Handling Makhanas
Roasted makhanas easily lose their crunch if exposed to air. Always seal them in a ziplock bag or airtight container immediately after snacking. If they do get soft, you can revive them by lightly dry-roasting them on a tawa for 2 minutes.
